60ml mirin (Japanese sweet rice wine)
50g light brown sugar
60ml soy sauce
4 x 125g pieces salmon
2 x 15ml tablespoons rice vinegar (Omitted since I don’t have it!)
Olive Oil, for pan frying
- Marinade fish for about ten minutes. Make sure to turn each side of the fish to soak in the mixture – 5 mins each.
- Heat pan, drizzle in Olive Oil and pan fry your fish.
- Depending on the thickness of your cut of fish, moderate time accordingly.
Serve with side dish of your choice. I served this dish with a Warm Snow Pea Salad.

I really liked how the smell somehow transports me back to Japan. The smell of oily fish and a burnt sugary smell in the pan.
*Prior to using the fish, I had the fillets soaked in milk prior, to remove most of the fishy smell.
Which is best since I am using frozen not fresh fish.
A very easy way to season your fish when a quick meal is needed.
